In general, but more so in the spring and summer, I’m just SWIMMING in eggs.
I give a lot of them away, and Hooey and I eat quite a few (probably too many, according to my blood cholesterol numbers).
I’ve recently started making and canning pickled eggs, using a hot/spicy recipe. Not bad. I’m not a huge fan of pickled eggs because of the vinegar taste, but if you put enough garlic, jalapeños and habaneros in there with them, no so vinegary any more. 😉
